This is so easy, delicious and healthy. I personally like my soup to be a little more chunky than brothy but you can adjust accordingly.
Ingredients:
1 small onion, chopped
1 tbsp minced garlic
3 small or 1 large sweet potatoes
1 yellow squash, diced
1 zucchini squash, diced
6 celery stalks chopped
6 large carrots peeled and chopped
3/4 cup of the Trader Joe's Harvest Grain blend (or any quinoa/orzo/small grain blend)
1 carton of Vegetable broth
1 can diced tomatoes
1 tbsp of Herbs de Provence (thyme, oregano, basil)
Salt and Pepper to taste
Directions:
1. You can chop in order or ingredients. In a large pot or dutch oven heat a bit of olive oil and put in your onion and garlic. Saute for a few minutes.
2. Add in your sweet potatoes and stir around.
3. Add in your Squashes and let cook with the lid on for about 3-5 minutes.
4. Add in the carton of Vegetable broth and keep on medium heat, once it starts to boil ad in the carrots and celery, a little salt and pepper. I let this sit for about 10 minutes bubbling.
5. Add in the can of diced tomatoes and tbsp of Herbs de Povence, and the 3/4 cup of grain blend.
6. Let is simmer for an hour or so, I always think the longer the better!
For a meatier option you could add shredded rotisserie chicken or steak.

One of the key items to purchase pre baby is your stroller. My husband and I went out to Buy Buy Baby and literally stood apart from each other and Atlee made me push strollers towards him to see which one would continue strait and not veer off if an accident happens!

Getting into a routine post baby is ideal. It is not only great for you to get out and enjoy some fresh air but also stimulating for your baby to hear all the noises and use all of thier senses! Even if it is just a 15 minute walk to start out and working your way up to 30 minutes to an hour!
